1. Preheat the oven to 350F/175C. Place the graham crackers into a food processor and process until they've completely broken down into fine crumbs.
2. Put the butter into a microwave-safe bowl and microwave for 60 seconds or until melted. Stir the melted butter into the cookie crumbs until it's been totally absorbed.
3. Scoop the buttery cookie crumbs into a 12cm/5" round greased cake pan and press down firmly with the back of a dessert spoon to form the base. Set to one side.
4. Quickly rinse out the inside of the food processor and add in the cream cheese, yogurt, sugar and vanilla extract. Process for 60 seconds until combined.

6. Grease 9 inch springform pan and adjust two oven racks, one in the middle and one on the bottom. Preheat oven to 350 F.
7. Make the crust: Blend or pulse graham crackers in a high speed blender or food processor. Drain the water from the soaked dates, add to blender, and pulse again until a dough forms. Scraping down the sides when needed. (Dough should be crumbly, but stick together when pressed between fingers.)
8. Transfer crust mixture to springform pan and press down into an even layer and up the sides a little. (The crust may dry out a little if sitting on the counter, so just add a few drops of water to it when pressing into pan).
