Transfer the stollen onto the baking sheets, placing 2 of the loaves on 1 baking sheet. Let rise until puffed and risen a bit, about 45 minutes. It will not double in size. Meanwhile, arrange 2 racks to divide the oven into thirds and heat the oven to 350°F. When ready to bake, brush the stollen with half the remaining melted butter.
This gluten free, low carb stollen is made with almond flour and coconut flour. It has a moist sugar free marzipan filling and gorgeous festive flavours - just like the German original. Even though I am using sultanas in this recipe, one generous slice is only 7.3g net carbs.
To prepare brown butter, melt unsalted butter and simmer at a low setting. Let the milk solids settled at the bottom of the pan to toast to a light brown. For this stollen recipe, strain the light golden liquid from the top and use. Traditionally the dried fruits are soaked overnight in rum. I do not use rum, so I have used orange juice instead.
Use a combination of equal amounts of light olive oil and brown butter (recipe in notes section of cranberry stollen ). If using only light olive oil, then lower the amount of total fat by about ⅓rd. Use only butter or brown butter for the stollen coating as that is important for the characteristic taste of stollen. Preferably use grass fed butter.
