Porcupine Meatballs are an easy, budget, weeknight dinner. Tasty ground beef meatballs with onions, breadcrumbs and rice, simmered in a rich tomato sauce. In a large bowl combine the rice, water, onion, salt, celery salt, pepper, ground beef, breadcrumbs, garlic and vegetable oil.
Combine meat, rice, onion and salt. Form into 1-2 inch meatballs. Place in a single layer in a deep baking dish. Combine soup, water, and Worcestershire sauce. Pour over meatballs (meatballs should be mostly covered). Bake covered for 1 1/2 hours at 350 degrees, or until rice is tender.
Steps to Make It Combine the ground beef, rice, onion, 1/4 cup of the water, salt, and pepper. Shape meat mixture into 12 to 15 meatballs. Combine the soup, chili powder, and 3/4 cup of water in a large saucepan; bring to a boil. Reduce the heat to low, cover the pan, and simmer over very low heat for about 1 hour.
In a large bowl, combine ground beef, garlic powder, pepper, paprika, salt, celery salt, onions, and uncooked rice. Mix well, and add water a little at a time until mixture is easy to work with, but not too lose. Shape into 1-1/2-in meatballs, and set aside.
