These Dauphinoise potatoes are luscious and creamy. The potatoes will be perfectly seasoned after absorbing all the flavor in the sauce, and come out super tender. Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish. Melt butter in a medium saucepan over medium-low heat.
Peel and slice the potatoes into 1/4-inch slices. Add to a medium saucepot the milk, cream, salt, nutmeg, thyme, garlic and sliced potatoes. Bring to a boil, reduce to a simmer and par-cook the potatoes for 10 minutes. Butter a small cast-iron or oven-safe sauté pan.
Strain the infused milk into a measuring jug, then slowly whisk it into the crème fraîche. Stir in the crushed garlic clove, then add the potatoes. Season, then toss to coat. Pour into a 2 litre gratin dish and sprinkle with the thyme leaves, nutmeg and cheese. Cover with foil, then bake in the oven for 35 minutes.
