1. Place a non-stick skillet on the stove over medium heat. Spray with cooking spray or use butter or coconut oil and let melt.
2. Mix the eggs, protein powder, and baking powder in a large bowl. Add the water or almond milk a little at a time until the batter is pancake batter consistency. You may not need all of the water.
3. Using a 1/3 cup measure, pour out the batter into the skillet. I was able to make 3 at a time. They are ready to flip when bubble start to form on the top.
4. Serve with butter, sugar free syrup, and chocolate chips.

1. Mix the pancake mix and protein powder together in a bowl before stirring in the milk slowly. You may need more/less milk if you're using a different protein powder.
2. Stir until everything is just mixed without any major lumps. Over mixing will make your pancakes flat.
3. Heat a pan or griddle over medium-high heat with nonstick cooking spray. You may need to test your stovetop for best results.
4. Slowly pour 1/4 cup circles in the pan, pouring into the center of the circle for symmetrical pancakes.

1. Add the protein powder into a large mixing bowl with the eggs, and mix to combine.
2. Whisk in the sugar substitute, baking powder, vanilla extract, cinnamon and vanilla.
3. Pour the heavy whipping cream into the mixture and whisk to combine. If the mixture is too thick, add some water until it has a consistency like traditional pancake batter. If too thin, add a tiny bit of xanthan gum.
4. For well formed circles, use greased pancake or egg rings. Heat a skillet over medium heat and place a little of the batter into it. Cook for a minute or so on one side and the flip to cook the other. Repeat this process with the remaining batter.
