This low carb queso is smooth, creamy, and incredibly cheesy! It’s easy to customize – make it more or less spicy, skip the onions, etc. Once you have the basic cheese sauce ratio down, you can really make this dip however you like! Melt some butter in a skillet and then stir in some onion, jalapeno, and cumin.
Then, add the drained green chilis to the keto queso and stir to combine. Step 3: Slowly add cheese one handful at a time, stirring with a whisk each time before adding more. Continue adding the cheese a little bit at a time while stirring continuously until all the cheese is added. I have found that using a whisk helps to incorporate the cheeses.
This Copycat Chuy’s Queso recipe can be easily modified for a low carb diet. Instead of using Velveeta cheese, try substituting with Monterrey Jack and Cabot Clothbound Cheddar (higher in protein, lower in carbs) or simply full-fat cheese. If you’re on a keto diet, simply replace the half and half with heavy whipping cream.
Milk: Whole milk is best, or I imagine 2 percent would work if that’s what you have. I’ve also successfully made this queso with a thick, unsweetened, plain alternative milk (specifically, Forager brand’s cashew milk). Cream cheese: Cream cheese makes this dip thick and ultra creamy. It also offers a bit of tang.
