In a slow cooker, combine the Chourico , green pepper, onion, tomato paste, wine, water, and crushed garlic. Stir so that everything is evenly distributed.
Ingredients. 1 2 pounds chorizo sausage, casings removed and crumbled. 2 2 medium (blank)s green bell peppers, seeded and chopped. 3 2 medium (2-1/2" dia)s sweet onion, peeled and chopped. 4 1 (6 ounce) can tomato paste. 5 1 cup red wine. 6 1 cup water. 7 2 tablespoons crushed garlic Add all ingredients to shopping list.
Each brand of chouriço has a different level of fat, this recipe is based on Michael’s Provisions Chouriço which has a low fat content and so it produces less liquid when cooking… If you are using a chouriço with a higher fat content, you may need to cook longer to cook off some of the liquid.
For the person who thought they might not have used the right sausage here is a tip: Spanish Chorizo is fully cooked and is in a casing similar to polish sausage. It slices/dices and can be added to anything like cornmeal muffin batter with cheddar cheese. Mexican Chorizo is RAW and crumbles when cooked.
