Perfect pikelets are just as enjoyable with a generous spread of butter. Sift flour and soda together into a medium bowl. Stir in sugar. Make a well in centre. Gradually stir in egg and enough milk for a smooth, pouring consistency. Rest 15 minutes. Heat a large, non-stick frying pan on medium. Brush with butter.

These healthy banana pikelets are super easy to make with just five ingredients. They are sugar free, freeze well and make an excellent kid friendly lunch or snack. Sift the flour. Add the flour, baking powder and cinnamon if using to a bowl and mix well. Peel the banana and add to separate bowl. Mash well.
