This Ocean Spray cranberry bread has the perfect balance of sweet flavors along with the tart cranberries, and it’s wonderfully moist and soft and just tastes delicious. It’s one of the best things to make as a side for Thanksgiving dinner or really any Holiday.
Preheat oven to 350ºF (180°C). Grease a 9 x 5-inch (23 cm x 13 cm) loaf pan. Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts.
If you dont have ocean spray cranberry juice, you can use any type of cranberry juice or even 100% apple juice. You can use white sugar, brown sugar, or even honey in this recipe. You can add other dried fruits like raisins, apricots, or cherries to the bread. You can use fresh or frozen cranberries in this recipe.
Stir in cranberries and nuts. Spread evenly in loaf pan. Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely. Wrap and store overnight.
