2. Soak the cashews from three hours to overnight if you have not done so. When you are ready to make this, drain the cashews from the water and give them a rinse. Then place the cashews into food processor or strong blender and give them a quick blend
3. Add the remaining ingredients, except for the fruit, to the blender/processor and blend until you get a smooth consistency
4. Transfer the ingredients to the prepared crust and gently mix in the fruit. Cover with plastic wrap and freeze overnight. Allow the cheesecake to sit on the counter for ten minutes before serving.
