1. Put all ingredients in a food processor (or high-powered blender, just be careful not to over process them) and process until the dates and almonds are completely broken down and the mixture hold together when you press it between your thumb and finger.
2. Using your hands, press the mixture together and transfer it to a sheet of wax or parchment paper. Roll the mixture so it is approximately 1/4″ thick. I used a slightly damp French rolling pin to do this. You can also just press it out with your hands if you prefer. If the mixture sticks to your hands, get them slightly wet.
3. Use a gingerbread cookie cutter to cut the dough and transfer the cookies to the wax or parchment paper. Roll out excess dough to make more cookies. If you are short on time and the cuteness factor isn’t important to you, you can simply cut the cookies into squares. A pizza cutter would work great for this, or just use a knife.
4. Using your hands, roll the mixture into approximately 1-inch balls.

2. In a large mixing bowl, lightly beat the egg until the yolk breaks apart. Whisk in the molasses, coconut oil, 1/4 cup (50 g) coconut sugar, vanilla, ginger, and 1/2 tsp cinnamon, mixing until smooth. Add the almond flour, coconut flour, and baking powder, mixing until well combined.
3. Add the remaining cinnamon and sugar to a small bowl. Scoop out a rounded tablespoon of dough and roll it between your hands to form a ball. Roll the cookie ball in the cinnamon sugar and place it on your prepared baking sheet. Repeat until all the dough has been used up, and then use a jar or flat-bottomed cup to gently flatten each cookie.
4. Bake for 9-11 minutes.* Remove the cookies from the oven and allow them to cool on the sheet for ~5 minutes before transferring them to a cooling rack to cool completely. Store them in an airtight container at room temperature for up to 5 days.
