1. Heat cream to a simmer in a small heavy saucepan. Stir with a spatula to prevent burning. If you are using one of the optional flavorings, add it to the cream. Stir to combine.
2. Place the chopped chocolate in a separate bowl. Once the cream is just simmering, pour the cream over the chocolate. Allow the cream and chocolate to stand for a few minutes, then stir until smooth.
3. Allow the chocolate truffle mixture to cool, and then place in the refrigerator until firm.
4. Use a teaspoon or a small cookie scoop to portion the chocolate truffle mixture onto a plate or a baking sheet lined with parchment paper. Roll the balls in your hands quickly to shape. If the truffles have softened too much from the heat of your hands, return to the refrigerator to firm.
