This Ground Turkey Sweet Potato Skillet is a healthy, flavourful gluten-free meal that can be made in one pot for your whole family to enjoy! You don’t have to eat bland boring food to eat healthy and this Ground Turkey Sweet Potato Skillet is proof enough of that!
While the turkey cooks, prepare the sweet potatoes. After removing the turkey, and to the same pan, heat 2 tablespoons of olive oil over medium heat. Add the sweet potatoes, sprinkle with ½ teaspoon salt, and stir to combine. Add the water, stirring to scrape any browned bits from the bottom of the pan.
Next, add the onions and yellow peppers, and cook until the onions are soft. Then, add the sweet potato, red chili flakes, salt, and pepper. Cover the skillet, and cook until the sweet potatoes are tender, stirring occasionally. If necessary, add more olive oil or a little bit of water to cook the sweet potatoes faster.
In a large cast iron skillet, heat olive oil over medium-high heat. Add garlic and cook for 1 minute and then add ground turkey. Use a wooden spoon to break apart meat and continue cooking approximately 8 minutes until browned. Add cumin, chili powder, salt and pepper. Stir well to incorporate. Add onion and bell pepper, and cook for 3-4 minutes.
