Preshredded cheese does not melt as well in the oven to help make the taquitos roll properly, so it is best to shred your cheese by hand for this recipe. Make 6 round mounds of shredded cheese on a baking sheet that is lined with parchment paper.
Add a couple of taquitos to the hot oil and fry for a 1 minute on a sides or until golden brown. Remove taquitos from pan and place on a paper towel to dry. Serve with sour cream, salsa or guacamole.
