1. Put mozzarella cheese and 2 oz of the cream cheese in a microwave safe bowl. Microwave one minute. Stir. Microwave 30 seconds. Stir. At this point all the cheese should be melted. Microwave 3o more seconds until uniform and gloopy (it should look like cheese fondue at this point). Mix in the egg and baking mix. You will need to dump it onto wax paper and knead it by hand to thoroughly incorporate the ingredients or you can do this in a food processor with the dough blade.
2. Press the dough out on parchment paper into a piece about 8 x 11 inches.
3. Preheat panini press. This only takes a few minutes.
4. Spray the panini press with cooking spray and carefully put the dough on the press. Close the lid. Cook for about 5-7 minutes until the dough is golden. Remove and cool. Cut into 3 or 4 pieces. Slice each through the center. The dough in the center is still undercooked. By slicing it through the center and inverting the pieces to make the sandwich you can completely cook the dough on the panini press.

3. Shape. Dip your hands in the bowl of water and transfer dough to your prepared baking sheet. Use wet hands to press the dough into a 10” circle. Fold over the edges to form a crust. Use wet hands to smooth any cracks that have formed in the dough so your surface is smooth.
4. Top + bake. Top your dough with sauce, then cheese (1 cup), then toppings. Bake in preheated oven for 18-22 minutes, or until the toppings are golden brown and the dough is cooked through. Wait 8 minutes before slicing, and enjoy!
