I’ve been to many Mexican restaurants and they seem to always give you a small cup of Sopa de Fideos (Mexican noodle soup) as an appetizer before the meal. Fideo is the Spanish word for noodle and sopa translates to soup. You can find small packages of fideo in the ethnic aisle of your local grocery store.
Ingredients for Sopa de Fideos Mexican Noodle Soup one-7 oz package of Fideo or thin spaghetti broken into small pieces 2 tablespoons olive oil 1- 14 oz can diced tomatoes 3- 14 oz cans chicken broth 1 small yellow or white onion, chopped 1 large clove of garlic, coarsely chopped 1 tablespoon fresh chopped cilantro freshly ground black pepper
You can also freeze Sopa de Fideo. Transfer the cooled leftovers to a freezer-safe container, and wrap it in a layer of aluminum foil. Freeze for up to 3 months. Thaw in the refrigerator overnight before you reheat and enjoy!
