DirectionsStep1In a medium saucepan over medium heat, combine the cherries, raspberries, and water. Bring to a boil, then reduce the heat to a simmer and cook until the berries can be easily mashed with a fork, about 4 minutes.Step2Remove from heat and stir in the powdered sweetener and the cherry extract. Set aside.Step3Preheat the oven to 325F and grease a 15 by 10 inch jelly roll pan. Line the bottom of the pan with parchment and grease the parchment.Step4In a large bowl, whisk together the almond flour, sweetener, cocoa powder, coconut flour, protein powder, baking powder, and salt. Stir in the eggs, butter, and vanilla extract until well combined.Step5Stir in 1/2 cup water until well combined. If the batter is overly thick, stir in more water 1 tbsp at a time. The batter should be spreadable but not quite pourable.Step6Spread the batter evenly in the prepared pan, and smooth the top with an offset spatula. Bake 15 to 20 minutes, until the top is firm to the touch. Remove and let cool completely in the pan.Step7Once cool, spread the cherry filling evenly over the top of the cake, spreading out the cherry bits as evenly as possible.Step8In a large bowl, combine the cream, sweetener, cherry extract and vanilla extract. Beat until the cream holds stiff peaks.Step9Spread about 3/4 of the whipped cream over the cake, as evenly as possible. Use the remaining cream to pipe rosettes decoratively on the top of the cakeIngredientsIngredients¾ cupFresh Cherries (pitted, chopped)½ cupFresh Raspberries1 cupWater⅚ cupPowdered Swerve Sweetener2 ¼ teaspoonsCherry Extract2 cupsAlmond Flour⅔ cupGranulated Swerve Sweetener½ cupCocoa Powder⅓ cupCoconut Flour⅓ cupUnflavored Whey Protein Powder (can sub egg white powder)1 tablespoonBaking Powder½ teaspoonSalt4 Large Eggs (room temperature)½ cupButter (melted)1 ½ teaspoonsVanilla Extract2 cupsHeavy Whipping Creamadd Fresh Cherries (whole or halved)add Sugar-Free Chocolate Sprinklesadd Shaved Dark ChocolateSee moreNutritionalNutritional229 CaloriesFrom alldayidreamaboutfood.comRecipeDirectionsIngredientsNutritionalFeedbackThanks!Tell us more

    1. Preheat the oven to 350°F (180°C). If you are going to use the fan, 320°F (160°C) should be enough. Line the bottoms of two 8" or 9" springform pans with parchment paper.
    2. Roughly chop pitted sour cherries and place in a medium bowl with 3 Tbsp. cherry vodka or rum. Let sit at room temp for at least 30 min, stirring a couple of times. Drain cherries in a sieve over a bowl. Keep the cherries and syrup. You should get about ¾ cup total syrup. If not, add some water.
    3. Dissolve, heat and melt gelatine powder according to instructions.Beat heavy cream with the whisk attachment on high speed until soft peaks form. Add powdered erythritol and 1 Tbsp. cherry vodka (or rum) and beat on high for another minute. Add dissolved gelatine (cooled to room temperature) slowly and beat for another minute or two until stiff and spreadable.
    4. Place a first sponge cake layer on a cake stand and brush with 1/3 of the syrup. Top with about 1 cup frosting and spread 1/2 of the chopped cherries on top. Repeat with remaining layers and top with the flattest layer. Fill the cracks along the sides of the cake with frosting, then frost the top and sides with remaining frosting. Leave some of the frosting in a piping bag in the fridge for the decoration frosting (optional).
