In a bowl whisk together the almond flour, baking powder, and salt. Set aside. In another bowl, whisk together low carb granulated sweetener, yogurt, eggs, softened butter, lemon zest, and vanilla extract. Add the dry ingredients to the wet and mix until fully combined.
Cream together the butter, cream cheese, and sweetener. Blend in the eggs and then the extracts. In separate bowl, combine the almond flour, coconut flour, and baking powder. Slowly stir in the flour mix into the egg mixture. Coat blueberries in coconut flour, then stir into batter.
Because we always have tons of blueberries in the freezer, I’m always on the look out for new low carb blueberry recipes. I often just make a sugar free blueberry syrup that I’ll use over low carb waffles or pancakes. I also pour this blueberry sauce over low carb ice cream and mix it into plain high fat yogurt.
