Low Carb Blackberry-Blueberry Cobbler is a delicious sugar-free summer dessert with lots of juicy berries and a buttery cobbler topping. Preheat oven to 350 degrees and grease a 9x9-inch baking dish. Place blackberries and blueberries in prepared pan. Sprinkle them with xanthan gum, lemon juice, and 2 tablespoons Sverve.
The topping is a blend of almond flour, coconut flour, sweetener, and egg. Butter is drizzled over top to add flavor and fat. You could use any fruit you like in this low carb cobbler, even frozen fruit would be fine if you don’t have fresh.

The coconut flour didn’t turn out well at all, but the sunflower seed meal can be an okay option if you are nut-free. Still, truth be told, almond flour was by far the best. As long as you don’t wait overnight (this sugar-free blackberry cobbler recipe doesn’t store well – sorry!), it actually created the best buttery crust.
