This lime jello salad is a great recipe my mom made every year for Thanksgiving making it a family tradition for us — we just gobble it up! It can be made a day or two ahead of time if you like. It looks just beautiful in a cut crystal bowl. Combine boiling water and gelatin mix in a large bowl; stir until dissolved.
1 envelope grass-fed gelatin about 7 ounces or 2 1/2 teaspoons. 1/4 cup cold water. 1/3 cup boiling water. 1 cup low carb sugar substitute or equivalent low carb sweetener. 1 tablespoon lime zest. 3 tablespoons lecithin granules ground fine (optional) 2 cups cold whipping cream. 2/3 cup key lime juice.
Beat in the gelatin water slowly as you beat the mixture again until the gelatin is well combined. That’s all there is to making this low carb dessert! However, it does take at least an hour or two to set in the refrigerator. Although you can chill the mousse in the mixing bowl, I recommend transferring it to individual dessert dishes.
Combine boiling water and gelatin mix in a large bowl; stir until dissolved. Stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour. Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
