This is a healthy baked lemon slice that is gluten-free, grain-free, dairy-free, low-carb and low-sugar. It has two layers: an almond meal and coconut base that is pre-baked first and a lemony curd layer on top that is also cooked at the end.
It’s also really easy to make and is perfect for a healthy sugar free and low carb treat. Combine cream, butter and Erythritol in a small pan on the stove top and heat on a medium heat until just before it boils. Turn the temperature down to as low as you can and simmer very gently for a further 10 to 15 minutes. Allow to cool slightly.
Combine butter, milk, rind and juice in small saucepan, stir over low heat until smooth. Combine processed and chopped biscuits in medium bowl, stir in butter mixture.
