Thanks for this recipe…I love shortbread and Christmas is hard without it. I made a couple of changes I thought I’d share. As almond flour can be very dry I used 3 cups of almond flour to 1 cup of melted butter.
Scoop about one tablespoon of shortbread mixture and roll it into a ball. Repeat for the remaining mixture. Press them into cookie discs and place them on a parchment paper-lined baking sheet. Bake for 20-25 minutes, or until the edges become a bit crispy and browned.
