1. Preheat oven to 325°F. Spray a 9-inch springform pan with cooking spray and set aside. 1. In the bowl of an electric mixer, cream together cream cheese and sour cream until smooth, about 2 minutes.
2. 2. Gradually add sugar substitute and mix well. Add eggs, one at a time, beating until each is fully incorporated. Add lemon zest, juice, vanilla extract, and salt and mix until just combined.
3. 3. Pour into prepared pan and bake 1 hour to 1 hour 15 minutes or until center is almost set but still slightly jiggly.
4. 4. Let cool completely. Transfer to refrigerator and let set overnight.

Scrape the bottom and sides of your bowl. Add 1 cup sour cream and stir until incorporated.
4. Switch to low speed and add eggs 1 at a time until each one is just blended. Then add 2 packages of lemon instant pudding and stir until combined. The batter will look a little like scrambled eggs at this point, that's OK.
