You'll need about 1/4 cup of fresh lemon balm leaves per cup of water. To make 3 cups of tea, use 3/4 cups of fresh lemon balm leaves. Rinse herbs and place in a large teapot or mason jar. Cover with boiled filtered water and allow to steep at least 10 minutes and up to 4 hours. Strain and refrigerate what you won't drink immediately.
This recipe uses dried lemon balm but if you have access to fresh, that’s even better; use three to four times the amount called for. You could make a tea with just lemon balm, and it would be delicious and uplifting.
Lemon balm tea is an herbal tea made from the plant known by the botanical name Melissa officinalis. The plant is also frequently called common balm and balm mint. Lemon balm has a long history of culinary use dating back to the times of the Ancient Greeks. The lemon balm plant is native to Europe and Africa along the Mediterranean region.
Boil ½ gallon of water. Pour the boiled water over the lemon balm and cover with a lid. (I used a large dinner plate to cover the bowl.) Let this mixture steep for at least two hours. Strain through a colander and pour into ½ gallon container with a pour spout. Add 4 to 5 ice cubes to each 8 oz. glass.
