This healthy vegetable soup was actually inspired by a childhood favorite of mine - Lagman Soup. Lagman is an Uzbek soup that is typically made with lamb and a variety of vegetables. Traditionally, it is poured over spaghetti, making it into a soup much like Chicken Noodle Soup.
The noodles for a classical lagman are not very different from Chinese pulled wheat noodles, which are spun by hand like white ropes of wool. They are chewy and thick, perfect for serving with rich meat and vegetable soups or stir frying like the more familiar Chinese lo mein.
The aromatic broth is filled with vegetables and beef strips. In a large soup pot with heavy bottom heat the oil on medium-high heat. Add the beef strips and cook uncovered for about 5 minutes until browned from all sides. Add onion and garlic to the pot and cook on medium until soft. Add the other vegetables and saute for a few minutes.
