For the pilau, wash the rice under running cold water until the water runs clear. Soak in enough cold water to cover the rice and set aside. Put the lamb in a pressure cooker (or standard pan if you are not using a pressure cooker). Add the onions, garlic, ginger, bay, cinnamon sticks, cardamom and 2 tsp salt.

I personally feel like a Pilau is incomplete without cumin, black pepper, coriander seeds and cinnamon. Cloves and both kinds of cardamom, though used in a small quantity, do make an impact on the overall flavour and I don’t make my Pilau without them. At most, I will leave out the bay-leaf or star anise if I don’t have them to hand.
