3. Combine the sauce ingredients in a small saucepan. Heat up over low-medium heat, stirring frequently until it bubbles.
4. Place the double-fried chicken onto a tray lined with baking paper. Using a pastry brush, baste the pieces generously with the sauce. Turn over the chicken and baste the other side. Be sure to get the sauce into every nook and cranny.

4. For the second and final fry, bring the oil temperature up to 375°F/190°C. Fry the chicken in batches—1 minute for bone-in pieces and 30 seconds for boneless pieces. Drain on a cooling rack.
