1. Gather all the ingredients.
2. Cut pork belly into ~4 inch lengths and ~1/2 inch thickness and lay flat on cutting board. Sprinkle salt on both sides and set aside. Note - it's easier to slice meat more precisely if semi-frozen.

3. To this mixing bowl, add-in Soy Sauce (3/4 Cup), Brown Sugar (3/4 cup), Sesame Oil (2 Tablespoons), Minced Garlic (2 Tablespoons), Black Pepper (1/2 Tablespoon).
4. Place the pork pieces into the marinade. Cover bowl with saran wrap. Then place in refrigerator for 24 hours!
