1. Prepare the ingredients for the marinade of your choice. Mix all of the ingredients well.
2. Pull off the membrane if it's not been removed (see note 2). Cut each slab of the ribs into two pieces for easier handling. Rinse the ribs and drain. Coat the ribs well with the marinade, and marinate them for a minimum of eight hours (preferably 24 hours to 48 hours). Turn them over once after half of the marinating time has passed. (You can use large zip lock bags for easier handling.)
3. Preheat the oven to 325°F (300°F if using a convection oven). Line a baking sheet with aluminum foil. I used 2 baking dishes. Arrange the ribs, meat side down. If using the mild marinade, pour some marinade into the baking sheet or dish. Cover the baking sheet/dish tightly with aluminum foil. Bake them for 1.5 hour (2 hours if you want fall off the bones tenderness). Remove the foil cover.
4. Option 1: Change the oven setting to broil (500°F) and preheat for a few minutes. Then broil the ribs until the ribs are lightly caramelized and charred, about 5 minutes on each side. Baste the ribs with the sauce a couple of times while broiling.

2. Remove the silvery membrane from the underside of the ribs by sliding a table knife between the membrane and a rib bone. Pry the membrane up, stretching until it tears. Holding one end of the membrane with a paper towel, peel off the membrane and discard.
3. Place ribs in a dish that is long enough that they fit comfortably.
4. Add marinade ingredients to a bowl and whisk to combine.

1. If the ribs are really fatty, trim off some (not all) of the fat before laying them out in two large, deep baking dishes (I use disposable aluminum pans). Rub the ribs with the brown sugar; set aside while you make the marinade.
2. In a medium bowl, whisk the soy sauce, water, mirin, onion, garlic, sesame oil, and black pepper together. Pour the marinade over the ribs, evenly dividing it between the two baking dishes/pans. Cover and refrigerate for at least 6 hours or up to 12. Allow the ribs to sit at room temperature for 15 minutes before grilling.
3. Preheat a gas grill high for 10 minutes. Turn down the heat to medium-high and grill the ribs for 3 to 5 minutes per side, depending on the size and thickness of the ribs (i.e., large ribs need more time). Transfer the finished ribs to a large platter, cover, and let rest for 5 minutes before serving. Sprinkle the chopped chives over the ribs as you serve them.

1. Preheat oven to 325°. Line a rimmed baking sheet with foil. Season ribs with salt and pepper and place on the sheet. Use a second sheet of foil and cover the ribs, folding edges together to create a pouch. Place in oven and bake for 1 ½ hours.
2. In a small bowl, mix to combine all remaining ingredients. Divide and set aside.
3. Increase oven temperature to 425°. Remove ribs from foil packet and place directly on baking sheet. Brush with glaze. Return to oven for 30 minutes, basting every 10 minutes with glaze.
