In a large mixing bowl add unsalted butter and dark brown sugar, cream together. Add the large egg and pure vanilla extract and combine. Add the Kodiak Cakes mix and oatmeal. Add the semi-sweet chocolate chips, mix evenly.
2. Using a small cookie scoop, scoop the dough into balls and space out on the prepared rimmed baking sheet.
3. Bake for 9-11 minutes. I usually do the full time 11 minutes in our electric convection oven.
