Lamb Kleftiko – Method: Drizzle some olive oil, sprinkle half the sliced onion, a bay leaf, some rosemary, some of the oregano, some of the tomato slices and a couple of slices of lemon and half the garlic. Season well and place the meat on top. Drizzle olive oil over the top of the meat and place the rest of the ingredients all over the top.
Kleftiko is a traditional Greek recipe for tender slow cooked lamb. The name translates as ‘bandit’s lamb’, meat that was stolen and cooked in a pit to avoid detection. These days, it is simply seasoned lamb that’s slow-cooked with potatoes until it is so tender it falls off the bone.
Your Kleftiko will look a little grey and unappealing after several hours in the moist heat of the slow cooker. While this doesn’t affect the taste one little bit, you might want to give the lamb joint some colour by sticking under a hot grill (broiler) for a few minutes.
