1. Heat a large stock pot over medium-high heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
2. In a different pan, cook the bacon until crispy. Crumble and add to stock pot. Cook the chopped onion and pepper in the bacon drippings for about 5 minutes or until onions are translucent. Add to the stock pot.
3. To the stock pot, add in the diced tomatoes, tomato paste, and beef stock. Season with garlic, oregano, cumin, paprika, basil, garlic powder, onion powder, salt, pepper, and cayenne. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
4. After 2 hours, taste, and adjust salt, pepper, and other spices if necessary. The longer the chili simmers, the better it will taste.

1. Heat a large stock pot over medium high heat and add the oil. Crumble the ground beef into the pot and sprinkle with a little salt and pepper. Cook the beef, stirring, until 3/4 browned, and at this point you can choose to drain some of the grease if you desire, depending on how lean your beef is. Add the onion and bell pepper to the pot and cook until the beef is browned and the veggies softened, then add the jalapeños and garlic and cook another minute.
2. Once the garlic is softened, add in the tomatoes, tomato paste, broth or stock, spices and salt. Stir to combine, then cover the pot and let the chili simmer for 15-20 minutes (or longer if you have time.) While the chili simmers, prepare the garnish - see my note if you're making coconut sour cream.
3. Serve hot, garnished as desired and enjoy! Store leftover chili in a tightly lidded container in the refrigerator for up to 4 days, or freeze to keep longer. You can reheat the chili in the microwave or in a pot on the stovetop.

Add in all the spices and cook for a couple more minutes until fragrant. Some peeps enjoy their chili spicier, others strong on cumin, etc... so feel free to adjust the spices slowly as the chili cooks (the fun part!).
3. Add tomatoes and continue to cook over medium heat until it begins to simmer. Lower the heat to low and continue to cook for 15 minutes, stirring every so often.
4. Add in the beef broth, beer (optional) and coffee (optional). Continue to cook for 3 to 8 hours. Adding 1/4 cup water (or broth) at a time, as needed. Remember that the longer you cook it, the more flavor it gets!
