1. Preheat your oven to 275°F. The key to these tender ribs is cooking them low and slow for a while. Taking your baking sheets and line them with aluminum foil. You will want lots of excess foil on the sides to wrap them. Rinse your ribs and pat them dry, then put them in the center of the baking sheet.
2. You will want 1 baking sheet per slab of ribs. Start by adding some liquid smoke to your ribs. Rub it into the meat. It’s optional, but we love the smoky flavor. We used about 1 tbsp of liquid smoke per slab of ribs. In a bowl, mix together your brown sugar Swerve and the rest of the spice mixture to make your dry rub.
3. With gloves on, you will want to cover the slabs of ribs very well with the dry rub, sort of massaging it into the meat on both sides. The dry rub mixture is meant to cover both slabs, so divide it roughly in half.
4. Now, once the slabs are seasoned well, cover them very well with foil. Wrap them in another layer. You want them to be well covered to hold in all the juices when cooking. Put the slabs meat side down on the baking sheet and bake for 2.5 hours. Low and slow.
