1. Place chicken breast (1 pound) in a pot covered with 1" of water. Sprinkle water generously with salt and pepper.
2. Bring water to a boil, then reduce to a simmer. Cook the chicken like this for 15 minutes. Check to make sure the internal temp of the chicken has reached 165 F, then remove from the pot and set aside on a plate to cool.
3. Once cool enough to handle, shred the chicken using 2 forks.
4. Meanwhile, heat vegetable oil (2 tablespoons) in a large skillet and saute chopped onion (1/2 cup) until translucent, about 8 minutes.
