2. Heat half the butter in a large skillet or dutch oven over medium-high heat. Add the chicken and cook, turning occasionally, until browned. Transfer to a bowl while you cook the vegetables.
3. In the same skillet, melt the rest of the butter over medium heat. Add the onion and saute for 3 minutes, until softened. Add the ginger and garlic and cook for 1-2 minutes more, until fragrant. Add the crushed tomatoes and heavy cream, and bring the sauce to a simmer. Add back the chicken pieces.
4. Turn the heat to medium-low, and simmer for 5-10 minutes, until the chicken is cooked through and the sauce is reduced. Season with salt.
