1. In a medium bowl combine the diced tomatoes, garlic, red onion, basil, olive oil, vinegar, and salt and pepper. Set aside until ready to serve.
2. Season the chicken with the salt and Italian seasoning. Heat the oil in a large cast-iron skillet over medium heat.
3. Cook the chicken for about 6-7 minutes per side until browned and cooked through.
4. Top each chicken breast with the mozzarella and cover allowing the cheese to slightly melt before plating. Top with bruschetta mixture and serve.
