2. Dredge the pork chops through the egg and then firmly press the crumb mix over them. Set aside on a plate until all four are coated.
3. Heat approx. ½ an inch of oil in a large skillet.
4. Place the pork in the hot oil and cook for 7 minutes, turn and cook for another 5 minutes (cooking time will totally depend on the thickness of your pork). Pork is cooked when the internal temperature has reached 165° F.

4. While the pork is resting, add the stock, sugar, soy sauce, and Mirin to a small bowl. In another bowl, lightly beat 2 eggs. Add a tablespoon of oil to a pan over medium heat, and add the sliced onion. Fry the onions until they’re translucent and slightly caramelized.
