1. Gather all the ingredients.
2. Using the tip of the knife, prick the chicken skin so the fat can render more easily. Thoroughly pat the chicken dry and place it in the plastic bag.
3. Take out the chicken from the plastic wrap (I’ll be cooking two), removing the miso sauce as much as possible with your hands (and discard this miso sauce). Using a paper towel, remove the miso as much as possible and make sure the chicken is completely dry. Set aside.
4. Cut into ½-inch strips (as we eat with chopsticks). Serve on a plate or over the steamed rice (in this recipe) and drizzle the sauce over.

1. In a medium size mixing bowl, combine honey, low sodium Worcestershire sauce, onion powder, cooking oil, garlic, browning sauce, liquid smoke, vinegar, sesame oil, ginger and pepper. Mix well - Warm up honey if it has crystalized.
2. Rinse and pat chicken dry with paper towel. Trim off any excess fat or skin from chicken. Place chicken in bowl with the marinade and coat well. Cover and marinade chicken for at least 30 minutes if your time allows (or overnight).
3. Preheat the oven to 425°F.
4. Place chicken in a single layer along with the marinade to a foil lined cast iron skillet or baking dish. Bake for 25-30 minutes, turn over twice while baking to ensure the chicken stays well coated with marinade.
