DirectionsStep1Preheat the oven to 190oC/170oC Fan and Line 2 Large baking trays with parchment paper.Step2Melt the butter slowly until it is fully melted, leave to cool for a couple of minutes.Step3Once cooled, beat in both the light brown soft sugar and granulated sugar until they are all thoroughly combined.Step4Add the egg, egg yolk and vanilla extract and beat the mixture until the mixture becomes much lighter in colour, is smooth, and has increased in volume.Step5Add the dry ingredients (plain flour, bicarbonate of soda, and sea salt) and beat again until smooth.Step6Fold through the chocolate chips.Step7Using a 5cm Scoop, portion the cookies onto the trays (I did 6 per tray).Step8bake the cookies in the oven for 12-13 minutes for softer chewy cookies, OR 15 minutes for soft/crunchy cookies.Step9Leave the cookies on the tray for 5 minutes after they have finished baking, and then transfer to a wire rack and continue to cool!     2. Mix together the Butter and both Sugars until light and fluffy and thoroughly combined! Using an electric mixer is far easier for this because it gets very fluffy and perfect!
    3. Mix in the Vanilla and the Egg until thoroughly combined, then mix in the Cocoa Powder, Flour, Bicarbonate of Soda, Baking Powder and Salt until a thick paste/cookie dough is formed.
    4. Fold in the Chocolate Chips, and spoon the mixture onto the trays and make sure they are suitable spread out so they stay separate! (I usually fit 6-8 on each tray to be safe) I also use a 5cm cookie dropper/ice cream scoop to make them identical sizes.
