"Adapted from _Jamie's Italy_ by Jamie Oliver." Heat a large skillet or soup pot over medium-low heat, and add 2 tbsp olive oil. Saute the onion, celery, celery leaves, and garlic, covered, until soft and translucent, about 15 minutes. Add the rosemary, chickpeas and stock and bring to a gentle boil.
On a flour-dusted surface, use a rolling pin to roll out the pasta to about 2mm thick. Dust it well with flour, then loosely roll it up. Use a sharp knife to slice it ½cm thick, then toss it with your hands to separate the strands. Cook in boiling salted water for 2 minutes, then drain and toss with your chosen sauce.
It'll be smooth as silk and this means you're making wicked pasta! Now it's time to roll the dough out properly, working it through all the settings on the machine, from the widest down to around the narrowest. Lightly dust both sides of the pasta with a little flour every time you run it through.
