1. Use the lime pieces to rub the cavity and outside of each fish then rinse off and pat dry.
2. Use a knife and slash each fish (not too deep) both sides diagonally then use your hands to generously apply the seafood seasoning to the cavity and all over the outside of the fish. I used roughly just over 1 tbsp of seasoning and set aside.
3. Melt 1/3 cup of coconut oil on medium heat in a large skillet then add the fish and proceed to fry the fish for 5-10 minutes per side until crispy (larger fish will take longer to cook through, see post).

1. Heat 2 tablespoons oil in a large saucepan over medium heat. Add onions, carrots, bell pepper, habanero, cracked and whole allspice berries, peppercorns and thyme. Let stand at room temperature for 30 minutes before serving. Serve the fish and vegetables over rice, if desired.
