3. Working quickly, add small amounts of Water (1/2 cup) and some more ice cold water, around 2 tablespoons, to form a firm dough. Do not over water or overwork.
4. Form dough into a disk, wrap in plastic, and refrigerate for at least 1 1/2 hours or overnight.
