Cherries are lower in acid, so the addition of lemon juice is required to get the PH levels correct for canning. Do not use a jam bottle larger that 500ML (2 cups). When you pull your sugar-free cherry jam bottles from the canning bath, leave them rest for 24 hours without moving them, or tilting them.
