This raw cabbage salad recipe also just so happens to be low carb! Use multi-colored cabbage for a colorful side on your plate. In a large salad bowl, combine both cabbages, the carrots, bell pepper and cashews. Whisk together the lime juice, fresh ginger, garlic, soy sauce, sesame oil, honey and Greek yogurt.
Then, you simply combine the ingredients! In a small bowl, mix together the apple cider vinegar with the stevia (or other low carb sweetener). Add in mayonnaise and celery seed and whisk until a smooth dressing forms. Add the shredded cabbage to a large bowl or serving platter.
Place the shredded cabbage in a large bowl. Add the scallions. Add the sesame oil, rice vinegar, soy sauce, and red pepper flakes. Mix well with a large spoon. Let the flavors meld for 30 minutes. Mix again before serving. Allowing the flavors to meld is important.
The creamy low carb dressing is sweetened with stevia. Mix cider vinegar with stevia (or other low carb sweetener) packets. Whisk in mayonnaise and celery seed until smooth dressing forms. Pour dressing over shredded cabbage. Toss to coat cabbage with dressing.
