Made with 100% rye flour, sourdough, and a touch of honey, I hope you enjoy this wheat-free loaf as much as we do. Ingredients. 1 cup active rye sourdough starter. 2 ½ cups flour. ¾ cup water. 2 Tablespoons honey or molasses. 1 Tablespoon melted butter. 1 ½ teaspoons fine grained sea salt.
Our Sourdough pumpernickel dark rye bread recipe with molasses is straight forward to make and taste great. Add the yeast and 3 tablespoon warm water into a small bowl and mix. Let it stand for 5 minutes. Add the wheat flour, rye, flour, salt, and crack wheat into a large bowl and mix together.
Just remember, rye doughs tend to be sticky, so don't keep adding additional flour to eliminate the stickiness. This is the way it should be. Also, be sure to use instant yeast, not rapid rye yeast for this recipe.
Russian sourdough dark rye is a hearty bread meant to accompany a main-meal soup and, maybe, some chunks of pickled herring. Or try it in a grilled cheese sandwich with Eastern European flair!
