Cream Cheese Kolaches If cream cheese is your thing, this is the kolache recipe for you. They take less than two hours to make and overflow with sweet-n-tangy goodness. These are also thinner than some of the other recipes. So, these may be the better option if you’re looking to cut down on carbs. (They still aren’t low-carb, of course.)
Punch dough down and turn out onto lightly floured surface. Pinch off egg size portions and roll into a ball using the palm of your hands in circular motion. Place about 1 inch apart on greased pans. Brush kolaches with melted butter, cover with a cloth and let rise until light, about 1 hour.
The traditional Kolaches use farmer’s cheese (equivalent to cottage cheese in U.S.), you can mix with cream cheese or use cream cheese only. For the jams, I like to use apricot jam and black currant jams.
The jury is out on the spelling, too – as well as kolacky (pronounced kolotch-key) I also found references to kolach, kolache, and kolace! But they all amount to the same thing – a cream cheese-based cookie with jam or preserve, especially popular at Christmas-time.
