1. Preheat oven to 325 degrees. Spray two cavities of a muffin tin with cooking spray and set aside.
2. In a small bowl, combine almond flour, sweetener, cocoa powder, baking powder, salt, butter, heavy cream and egg. Mix until combined and smooth.
3. Evenly pour batter into the two prepared cavities of the muffin pan. Bake at 325 degrees for 15 to 17 minutes or until set. Remove from oven, loose the edges with a knife and let sit in the muffin tin for 2-3 minutes before removing. Let cool completely before adding in the filling. Option to bake in the microwave: Pour batter into a silicone muffin liner and microwave for 2-3 minutes or until set.
4. In a small bowl, microwave sugar free marshmallows for 10 seconds. Stir in butter and whipped cream until smooth.

2. Place all of your dry ingredients (almond flour, salt, baking powder, binding ingredient, ground cinnamon, allspice and ginger) in a bowl and mix together well. Set aside.
3. In a separate bowl, add your softened butter and beat on high with a mixer until light and fluffy, about 1-2 minutes. Add in your sweetener and mix up again until well combined and fluffy. Next, add in your vanilla, sour cream, lemon juice and eggs, one at a time. Beat until well mixed. Don’t worry if everything looks kind of “separated” it will all come together when combined with the dry ingredients.
4. Add your wet ingredient mixture to the dry ingredients. Mix again with the hand mixer until well combined. Then, fold in the grated carrots, the chopped walnuts and coconut. Mix together with a rubber spatula.
