Courgettes are smaller, younger zucchini, whereas zucchini are older and larger. Both are actually a version of the marrow, which is what some foodies call a fully developed zucchini. I know; it all sounds so confusing, so for this article, let’s just go with the “courgettes are zucchini” argument and leave it at that.
You’ll want to start with a jumbo courgette (or marrow, if you prefer), as the smaller pieces won’t be large enough to hold all the goodies.
