2. In a large mixing bowl, add the softened butter and granulated stevia. Cream together with a hand mixer or stand mixer for 2 - 3 minutes until the butter and sweetener are light and fluffy. Scrape down the sides of the bowl with a spatula where necessary.
3. Add the coconut flour, baking powder, salt, eggs and vanilla extract to the bowl. Keep the chocolate chips aside if using. Combine the mixture well. It will be quite thick so make sure to get everything mixed together well.
4. Take 2 tablespoons of the cookie dough and roll into a ball. Place onto the cookie sheet and press down with your palm into a cookie shape. If using chocolate chips, add a few to the top of the cookies and press down slightly.

You can eat the cookies directly from the freezer (if you prefer firmer cookies) or let them sit out a few minutes to soften before eating. Uneaten cookies should be stored in the freezer or fridge. Do not let the cookies stay out at room temperature for too long because they will become too soft.
