2. Place butter/marg, sugar and lemon zest into a large bowl or the bowl of your stand mixer. Beat until light and fluffy, about 2 minutes on med-high speed.
3. Add in the eggs and vanilla extract and mix until well incorporated, scraping down sides as necessary.
4. Add in the flour, baking powder and salt, if using, and mix on low until it starts to incorporate. Then stop mixing and add in the milk and mix on a medium speed until well combined and smooth.
